We invited Birmingham based vegan blogger Adina AKA VEGAN GIRLBOSS to put together a recipe series for our brand new blog. This first recipe is for these amazing Raspberry & Strawberry Rhubarb Crumble Bars
These wholesome vegan oat bars are deliciously fruity and super-easy to make! They are perfect for snacking or as a dessert, and amazing if you have any gluten-free friends coming round!

Ingredients:
Oat Crumble:
- 100g oats
- 130g oat flour
- 80g coconut sugar
- 80g melted vegan butter
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp cinnamon
Rhubarb and Strawberry Filling:
- 200g chopped rhubarb
- 240g raspberries
- 130g chopped strawberries
- 80g coconut sugar
- 1 tsp vanilla extract
- 1 tbsp corn flour
Method:
- Preheat the oven to 180C. In a large bowl mix oats, oat flour, coconut sugar, baking powder, salt and cinnamon. Stir in melted vegan butter and mix until it forms a crumbly dough.
- Using the spatula, pack 2/3 of oat crumble mixture into a 20cm square baking tray lined with baking paper.
- Bake the crust for 10 minutes. Remove from the oven and let cool for 10 more minutes.
- Meanwhile, in a large mixing bowl combine chopped rhubarb, strawberries, raspberries, coconut sugar, vanilla extract and corn flour.
- Transfer the mixture on top of the crust, then sprinkle with the rest of oat crumble. Bake for 35-40 minutes or until the top is browned. Cool completely, then refrigerate. Cut into squares and enjoy!
